Description
History
The Garganuda winery is 3 hectares of vineyards located in Montecchia di Crosara, in the province of Verona, in the heart of the Soave area. The estate is run by Andrea Fiorini Carbognin, who began his winemaking project in 2014, with the aim of cultivating and vinifying the Garganega grape variety in an authentic and sustainable way, trying to recreate a taut and vibrant Soave, similar to that of the past, far from modern softness.

Production method
The vines, about 40 years old, grow on volcanic soils, rich in basalt and minerals. After manual harvesting, the grapes are taken to the cellar for white vinification, with spontaneous alcoholic fermentation started only by indigenous yeasts inside cement tanks. During the entire production process, no clarification or filtration is carried out, and the wine is bottled with a screw cap.

Tasting notes
Straw yellow color. The nose features fruity aromas such as pear, white peach and citrus, accompanied by delicate floral notes of jasmine and a marked mineral component that evokes hints of iodine and flint. On the palate, the tasting is clean and very fresh, with a good structure and flavor, closed by a long citrus and mineral finish.
Possible pairings
Perfect as an aperitif especially on a warm spring/summer evening. When paired, it is at its best with pizza, mozzarella and fresh dairy products, including cheeses, freshwater or delicate fish such as salmon trout, carp and steamed cod. Also excellent with asparagus or delicate first courses with sauce.
