History
Jean-Philippe Fichet is a skilled winemaker of Burgundy, with his domaine located in Meursault. Here, together with his wife, he takes care of the vineyards mainly of Chardonnay. He is a passionate of natural wines, excluding the use of chemicals in his fields, making the collection by hand and never filtering his wines.

Production method
The Chardonnay in Burgundy is produced through traditional vinification, with fermentation in oak barrels and a refinement on the yeasts for 12-18 months. The resulting wines are characterized by freshness, minerality and complexity, with the ability to age well in the bottle.

Tasting notes
Very bright straw yellow color. On the nose the bouquet is intense, rich and changing: the scents of yellow fruit and honey give step to delicate floral notes and vanilla shades. On the palate, the wine is fresh, elegant and mineral at the beginning, and then become more and more creamy and deep with the passage of time.
Possible combinations
Its ideal combination is with dishes based on white meats, especially poultry, but also goes perfectly with fish and cheeses.
