Description
History
Founded in 1665 in Salice Salentino, Leone De Castris is one of the historic symbols of Apulian winemaking. With Surò, the winery reinterprets Susumaniello as a refined rosé, showcasing the fresher and more contemporary side of this ancient native grape variety that has recently been rediscovered and enhanced throughout Puglia.

Vinification
The grapes are harvested during the first part of September and gently crushed and destemmed. A short cold skin maceration extracts aromas and the wine’s characteristic coral-pink colour. After settling, fermentation takes place in temperature-controlled stainless steel tanks for around 20 days. The wine then ages briefly in steel to preserve freshness, aromatic clarity and varietal expression.

Tasting notes
Bright coral pink. Aromas of pink grapefruit, pomegranate, red berries and delicate violet nuances emerge on the nose. On the palate it is fresh, smooth and savoury with lively acidity, delicate yet satisfying body and a long mineral finish that encourages another sip.
Food pairings
Pairs beautifully with seafood starters, fish tartare, seafood risotto, fish soups, sushi, shellfish and Mediterranean summer cuisine. Also excellent as a refined aperitif or for outdoor dinners during warmer months.
