Description
History
I Mandorli is a winery in Suvereto (Livorno), practicing biodynamic viticulture and natural winemaking. The “Cabernet” label is one of its flagship wines: grapes are grown balancing coastal and hillside influences, fermented spontaneously, and matured with restraint to respect fruit expression.

Vinification
Fermented using indigenous yeasts; matured in neutral wood or lightly used tonneaux to add structure without overwhelming the varietal; bottle aging precedes release.

Tasting notes
Deep ruby red with violet hues. Aromas of ripe dark fruits, cassis, light vegetal notes and sweet spices. On the palate it is full, with firm yet silky tannins, solid structure, supporting acidity and a persistent finish with fruity and balsamic echoes.
Food pairing
Pairs beautifully with roasted meats, braised dishes, game, aged cheeses and bold-flavored foods. Serve at 16‑18 °C, ideally after brief decanting.
