Description
History
François de Nicolay’s project combines his experience from the Chandon de Briailles estate with an independent approach focused on organic and biodynamic farming, spontaneous fermentations, and minimal intervention. The 2023 Chablis is part of the estate’s non-premier cru range, vinified to highlight the purity of the fruit and the mineral imprint of Chablis soils. Though considered entry-level, it maintains high qualitative standards.

Vinification
Spontaneous fermentation with native yeasts, low-intervention winemaking, aging in stainless steel and neutral oak to preserve freshness and clarity, no aggressive filtration.

Tasting notes
Pale straw yellow color. On the nose: fresh citrus, green apple, white flowers, saline hints, and mineral tones. On the palate: tense and vibrant, with bright acidity, light but well-defined body, and a clean, mineral-driven finish that leaves a lasting impression of precision.
Food pairing
Perfect with oysters, seafood, grilled fish, fish carpaccio, lemon risottos, and fresh cheeses. Serve at 10‑12 °C.
