Description
History
François de Nicolay, from the family behind Chandon de Briailles, launched an independent project focused on wines from organically and biodynamically farmed vineyards. The “Vau de Vey” climat in Chablis is known for its steep slopes and marl-limestone soils, which lend wines tension, salinity, and a distinct mineral character. The 2019 vintage was balanced, with excellent diurnal shifts that encouraged aromatic ripeness while preserving freshness and acidity.

Vinification
Spontaneous fermentation with native yeasts, low-intervention winemaking, aging in used oak and stainless steel to retain freshness and transparency. No aggressive filtration, ensuring purity and minerality remain intact.

Tasting notes
Bright straw yellow. On the nose: green apple, pear, white flowers, lemon zest, and flinty minerality. On the palate: tense, vibrant, with lively acidity, elegant body, and a long mineral finish evoking the chalky soils of Chablis.
Food pairing
Perfect with seafood, oysters, raw or grilled fish, shellfish risotto, scallops, and also fresh goat cheeses. Serve at 10-12 °C.
