Description
History
François de Nicolay is a project parallel to the renowned Domaine Chandon de Briailles, focused on crafting pure, terroir-driven wines from biodynamically farmed vineyards. The 2022 Bourgogne Rouge comes from carefully selected plots in the Côte d’Or, vinified with spontaneous fermentations and aged in used barrels to preserve varietal expression and soil character. No fining, no aggressive filtration, and minimal sulfites reflect a respectful, natural winemaking philosophy.

Spontaneous fermentation with native yeasts, significant use of whole clusters, aged about 12 months in used oak barrels, unfiltered.

Tasting notes
Bright pale ruby color. The nose reveals red berries like strawberry and cherry, wildflowers, and a light earthy nuance. On the palate it is sleek and lively, with fine tannins, vibrant acidity and a clean, refreshing finish.
Food pairing
Excellent with poultry, stewed rabbit, mushroom dishes, delicate red meats and semi-hard cheeses. Serve at 15‑17 °C with brief aeration.
