Production method
The grapes are harvested manually, in order to preserve their quality. After the soft pressing of the grapes, they undergo a first alcoholic fermentation process, obtaining the base wine which will then be refermented. The second fermentation instead takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine you also develop carbon dioxide (which will then give life to the famous bubbles when uncorked). The process continues for at least 36 months on the yeasts and is disgorged at least 3 months before being placed on the market.
