History
Ricci Curbastro is a historic Franciacorta producer that has helped shape the identity and quality of Italian classic-method sparkling wines. The Demi-Sec expression stands out in the range for its smoothness and drinkability, achieved through a higher dosage than the Brut or Satèn styles. The result is a wine with plush fruit expression and integrated balance.

Chardonnay, Pinot Noir, Pinot Bianco
Vinification
Traditional method with secondary fermentation in bottle. Primary fermentation in temperature-controlled stainless steel is followed by extended lees ageing to build complexity and finesse. The Demi-Sec dosage imparts a more pronounced residual sweetness than Brut, contributing to softness and roundness while staying balanced with freshness and sapidity.

Tasting notes
Straw yellow with fine, persistent bubbles. Aromas of ripe fruit (pear, yellow peach), white flowers, light honey and subtle bread crust. The palate is smooth and enveloping, with gentle sweetness balanced by fresh acidity, creamy texture and a pleasant, harmonious finish.
Food pairings
Excellent with creamy desserts, fruit-topped cakes, fine pastries, fresh fruit and blue cheeses. Also pairs intriguingly with spiced dishes or foie gras, offering a compelling contrast of flavours.
