Description
History
Val delle Corti was born thanks to the realization of a dream of Giorgio Bianchi, who wanted to live in the countryside and produce wine in 1974 and moved from Milan to Radda with his family. With the participation of his wife Eli they renovated an abandoned farmhouse, replanted some vineyards and built a small cellar, from that moment an era of great work and dedication for the production of Chianti Classico and more began. Since 1999 the company has been carried on by his son Roberto and his wife Lis, who thanks to their commitment and determination have brought Val delle Corti and its products to a level of international reputation.

Production method
Everything starts with a very selective manual harvest, with the choice of the best bunches. Once destemmed, the grapes undergo alcoholic fermentation, which starts thanks to the presence of natural yeasts, in stainless steel vats for three weeks or two weeks in open tonneaux. The wine is aged for 24 months in old barriques and tonneaux, with a further 6-month rest period in the bottle before being released for sale.

Tasting notes
It has a bright ruby red color. On the nose, a complex aroma of ripe red fruit such as cherry, fresh blackberry and small red fruits combined with spices. On the palate, it is elegant and again complex, with notes that recall ripe fruit and a captivating and persistent finish.
Possible pairings
The result of a gamble that began in 2014, where the company took care of all the details down to the smallest details, with consistency and dedication. This experiment has led Val delle Corti to a more than positive outcome, given that Extra is a wine that is also highly appreciated abroad. It is excellent when paired with first courses with meat sauce, even well-structured ones, or with red meats in general. Also excellent with selections of medium-aged cheeses.
