Description
History
The project is led by Eduardo Torres Acosta, originally from the Canary Islands, who rents small vineyards on the northern slope of Etna, farmed organically and biodynamically. The vineyards lie between 550 and 750 meters elevation on sandy volcanic soils. For the 2022 vintage, the grapes were fermented with native yeasts and aged for 16 months in Slovenian oak foudres of 750 and 3000 liters. The wine is bottled without aggressive filtration to preserve structure and aromatic integrity.

Nerello Mascalese 80 %, other red varieties 20 % (including Nerello Cappuccio and minor local grapes)
Vinification
Hand-harvested grapes; spontaneous fermentation with natural yeasts in steel tanks; about 10 % whole-cluster fermentation; maceration for ~15 days; aged in large Slovenian oak foudres for 16 months. Bottled without heavy filtration.

Tasting notes
Bright ruby red. On the nose: red fruits like cherry and raspberry, rose petals, delicate spice and a volcanic mineral core. On the palate: elegant with vibrant acidity, fine tannins, medium body, balanced between fruit and tension, with a savory, lingering finish and fruit-mineral echoes.
Food pairing
Pairs well with lighter red meats, wild boar, lamb, game birds, mushroom dishes, and pastas with game ragù; also good with aged cheeses. Serve at 16-18 °C.
