Description
History
Domaine Castagnier is a family-run estate based in Morey-Saint-Denis in the heart of the Côte de Nuits. For generations the family has cultivated its vineyards with great respect for the terroir, favouring low yields and minimal intervention. This wine comes from the same vineyard used for the estate’s Bourgogne Passetoutgrains but is vinified separately as a pure Pinot Noir to showcase its individual character.
Grape variety
100% Pinot Noir.
Vinification
The grapes are hand-harvested and fermented spontaneously with indigenous yeasts in wooden vats. The wine is then aged in oak for approximately 12 months, gaining complexity while preserving its vibrant fruit and freshness. This artisanal approach highlights the authentic character of Burgundy Pinot Noir.
Alcohol content
13%.
Tasting notes
Bright ruby red in colour. The bouquet reveals aromas of pomegranate, redcurrant, cherry and fresh red berries, complemented by delicate earthy nuances and subtle citrus notes. On the palate it is fresh, juicy and beautifully balanced, with light tannins, lively acidity and a long, fruit-driven finish.
Food pairings
Excellent with charcuterie, pâtés, roast poultry, white meats, beef tartare, mushroom dishes, savoury pies and soft cheeses. Served slightly chilled, it also makes a delightful all-purpose dining wine.
