Description
History
Part of the Dom Pérignon Plénitudes, the P2 is disgorged after 15–20 years, allowing the wine to unfold an enhanced maturity and sophistication compared to the standard vintage release. The 2006 vintage saw hot summers and a warm, botrytis-free September, ideal conditions for ageing excellence.
Grape varieties
A blend of 55% Pinot Noir and 45% Chardonnay from Premier and Grand Cru vineyards, with a precise dosage of approximately 4.5 g/L.
Vinification
Traditional fermentation, prolonged lees ageing, and a roughly 15-year delay before disgorgement result in enhanced aromatic complexity, fuller texture, and sustained palate tension .

Tasting notes
Pale gold with ultra-fine bubbles. Aromas of stone fruit, wild peach, candied citrus, brioche cream, cocoa, toasted hazelnut, and saline minerality. On the palate it is full and embracing, with vibrant minerality, balanced richness, and a long, zesty, citrus-driven finish .
Suggested pairings
Perfect with premium seafood like langoustines and scallops, delicate poultry such as pigeon or turbot, and alpine cheeses. Equally splendid as a contemplative champagne, ideal for celebratory moments.
