History
Dom Pérignon is Moët & Chandon’s vintage-only cuvée produced only in exceptional years. The 2013 vintage featured a cold winter, rainy spring, a warm but breezy summer, and a late harvest which achieved aromatic ripeness while retaining freshness. The Magnum was disgorged in 2023 after long lees aging to enhance texture, depth, and expressive capacity. Chef de Cave Vincent Chaperon oversees every phase to maintain Dom Pérignon’s style: purity, mineral tension, and harmony between bottle and grape.

Grape variety
Pinot Noir ~50‑51%, Chardonnay ~49‑50%

Vinification
Classic Champagne method: fermentation of both Chardonnay and Pinot Noir, minimum 8‑9 years on lees before disgorgement; low dosage (~5 g/l); winemaking with high precision to preserve acidity and varietal character.

12.5%

Tasting notes
Elegant nose of stone fruit (yellow plum, apricot), citrus peel, white flowers, toasty brioche, almond, light honey and a smoky/mineral nuance. On the palate it shows vibrant freshness, bright acidity, creamy texture, solid depth, with a refined finish marked by salinity and long persistence.

Food pairing
Excellent as a high‑end aperitif; pairs superbly with fine shellfish, raw fish carpaccio, sashimi, dishes with caviar, soft aged cheeses, or delicate desserts featuring citrus or almond. Serve chilled at approximately 8‑10 °C.

Dom Pérignon is a prestigious champagne brand initially founded by Moet & Chandon. The first harvest dates back to 1921, even if the first marketing took place only in 1936 following the Great Depression and the collapse of champagne sales; the production is made only in the best years. Usually the bottles are placed on the market at least 8 years after the harvest for the Brut, at least 12 for the Rosé.
