Description
History
The name reflects its vineyards planted eastward to catch the first light. Released in June 2020, this non-vintage Champagne blends 60% 2019 vintage with 40% 2018.

Vinification
Soft pressing, indigenous yeast fermentation in steel, and a minimum of 4 years lees aging for added depth and creaminess .
Alcohol content
12% .
Tasting notes
Pale yellow with green highlights and fine bubbles. Aromas of hawthorn, lemon cream, brioche, grey pepper, and flinty minerality, evolving towards acacia honey and white bread. On the palate it is supple and fresh, with creamy effervescence, succulent fruit, zesty acidity, and persistent limestone-driven minerality.

Pairs beautifully with oysters, shellfish, sushi, and delicate white fish, or enjoy as an aperitif .
