Description
History
Domaine David Moreau is a small estate in the Côte de Beaune managing roughly 5‑9 hectares of vineyards, specialized in Pinot Noir of the region. “Sous Montot” comes from a 1.78‑hectare plot planted in 1976‑77, west‑facing, on marly‑limestone soils. Moreau applies respectful techniques (use of indigenous yeasts, partial whole‑cluster vinification, mixed barrel and tank aging, careful vineyard management) to express the character of the cru and the vintage. The 2022 vintage benefited from favorable conditions, contributing to good acidity and intense fruit.

Fermentation with indigenous yeasts; about 5% whole‑cluster inclusion; aging partly in barrels and partly in tank; goal is to preserve freshness and fruit purity, while adding aromatic complexity.

Tasting notes
Bright ruby red. On the nose, ripe red fruits such as cherry and raspberry, delicate florals; nuanced herbal and mineral/earthy undertones. On the palate juicy, with lively acidity, soft but present tannins, medium body; clean finish with fruit echoes and a hint of spice.
Food pairing
Excellent with grilled or roasted white meats, rabbit, mushroom dishes, poultry, risottos with light truffle or delicate sauces; also with medium‑aged cheeses. Serve at 16‑18 °C.
