Description
History
Nicola Gatta is a producer located in the easternmost area of Franciacorta, with 5.5 hectares of vineyards on the hills of Gussago, at 400 meters above sea level. He follows biodynamic principles, avoiding the use of herbicides and synthetic chemicals, and employs spontaneous fermentations with indigenous yeasts. His philosophy is to enhance the territory through wines that represent it without compromise.

Production method
The grapes are hand-harvested and undergo spontaneous fermentation with indigenous yeasts, without skin contact. The cuvée is primarily composed of wines from the current vintage and a portion of reserve wine from the previous year, aged in concrete tanks. The second fermentation occurs in the bottle, with aging on the lees for approximately 30 months (“30 moons”) before disgorgement.

Palate: Fresh and lively, with good acidity and pleasant effervescence. Flavors of green apple, pear, and subtle minerality lead to a clean and persistent finish.

This sparkling wine is ideal as an aperitif and pairs perfectly with fish dishes, seafood, sushi, and fresh cheeses. Its freshness and liveliness also make it suitable for accompanying light appetizers and finger foods.
