History

Among the oldest wineries in Europe, this one has roots that date back to 1579 in Arlay, a small village next to the Jura mountains. Passed down from generation to generation fifteen times, through different centuries, it has always remained under the control of the same family. In addition to its centuries-old history, Bourdy is renowned for its collection of ancient vintages, which range back to 1926 for the reds, 1911 for the whites and even 1865 for the prestigious Château-Chalons. These wines are appreciated not only for their historical value, but also for their time-defying complexity. In 1990 the company was completely renovated and the vineyard ownership grew from 4 to 10 hectares, following a sustainable approach.

Production method

After the manual harvest of the grapes, they are destemmed and delicately pressed. After spontaneous fermentation with native yeasts, it matures for 3 years in oak barrels. In these barrels, which are never filled, a thin layer of yeast forms which gives characteristic oxidative aromas.

Tasting notes

Intense golden color. Notes of oxidation emerge on the nose, recognizable in hints of dried fruit such as walnuts and almonds, green apple, coffee and spices such as cloves, cinnamon and nutmeg. The flavor is very persistent, round and structured, recalling the same notes perceived by smell.

Possible combinations

This wine is perfect with white meat or fish main courses.
