Description
History
The Domaine Pignier winery has a history that dates back to 1200, when the Carthusian monks began cultivating the property’s vineyards. Purchased by the Pignier family in 1794, it is today a consolidated and renowned reality in the Montaigu area, in the Côtes du Jura. The land where the estate’s vineyards are located is particularly suitable for viticulture: located between 250 and 550 meters above sea level, it has a varied terroir composed mainly of calcareous, marly and clayey soils. The vineyards are exposed to the south-east, south-west and north-east and cover a total of 13 hectares. Since 1998, with the seventh generation of Pignier winemakers, the organic-biodynamic journey began.

Production method
After fermentation, the wine ages for 12 months in barrique.

Tasting notes
Intense straw yellow color with greenish and golden reflections. On the nose subtle aromas of white flowers, yellow fruits and vanilla. The entry into the mouth is full-bodied and lively, with a crystalline freshness.
Possible combinations
Its ideal pairing is with white meat dishes, especially poultry, legumes but it also goes perfectly with fish and cheeses.
