Description
History
Fontodi has been owned by the Manetti family since 1968, whose entrepreneurial background comes from the famous terracotta sector. The decision to also invest in wine and specifically in Chianti Classico di Panzano derives precisely from this strong bond with the Tuscan territory and from the desire to enhance the quality production of the region’s excellences, especially Sangiovese. The company is certified organic and extends over 170 hectares of land of which just over 80 are cultivated with vineyards. All agriculture practiced adheres to principles of respect for the vineyard, the environment and nature and sustainability is the watchword at Fontodi: we try not only to avoid in the most categorical way the use of chemical products and products harmful to the health of the environment, but rather to use as much as possible material coming from the company itself. For example, the vineyards are fertilized using a compost of pruning residues and manure that comes from the internal breeding of Chianina cattle. The winery is very modern and develops vertically in order to exploit the force of gravity to carry out the various stages of winemaking, which allows for greater integrity of the fruit and to obtain “healthier”, more fragrant and intense wines.
Grapes used
100% Sangiovese
Production method
After harvesting, destemming and pressing, the grapes are placed in stainless steel containers where they ferment thanks to the presence of indigenous yeasts naturally present on the skins. Fermentation on the skins lasts for at least 2 weeks with frequent punching down. After this process, the wine ages for 18 months in French oak barriques from Allier and Troncais, with a further period of rest in the bottle before being released for sale.

Tasting notes
Intense ruby red color, with a garnet-like edge. On the nose, notes of ripe red fruit, cherry, ripe berries, slightly wilted violets, herbaceous hints, toasting spices, coffee, black pepper and cloves. In the mouth it is lively, enveloping and ample with great acidity, elegant but lively tannins and a background minerality. Decidedly long and fruity finish, with hints of spices.
Possible pairings
In combination it is excellent with first courses with meat sauce, even well-structured ones, or with red meats in general. Also excellent with selections of medium-aged cheeses.
