Description
History
Savignola is a historic estate located in Greve in Chianti, with origins dating back to the eighteenth century. Today the winery is managed by Luzius and Manuela together with winemaker Alessandra. Paolina remains one of the estate’s most important historical figures, having successfully managed the winery during the 1950s and 1960s while introducing innovations that helped shape the modern identity of Chianti Classico.
Grape variety
Predominantly Sangiovese with a small percentage of native Tuscan grape varieties.
Vinification
The grapes are hand-harvested and carefully vinified. The wine ages for approximately 14 months in large oak casks, following the traditional style of the Paolina label, before spending at least two additional years ageing in bottle. This extended maturation enhances harmony, elegance and complexity.

Tasting notes
Deep ruby red in colour. The nose reveals ripe cherry, black cherry and red berry aromas, complemented by black pepper, sweet spices, tobacco and subtle balsamic nuances. The palate is full-bodied and harmonious, with ripe, polished tannins, vibrant freshness and a long, spicy finish.
Food pairings
Excellent with Florentine steak, braised meats, wild boar, game, Tuscan peposo, aged Pecorino cheese and traditional Tuscan cuisine. Its structure and elegance also make it ideal for long-term cellaring or contemplative drinking.
