Description
History
Founded around the 70s thanks to the vision of four families of Roman origin, with the aim of revitalizing the area and the vineyards and giving Chianti Classico the fame of the past. The vineyards extend over an area of approximately 75 hectares at an altitude ranging from 475-520 m which are the cradle for wines of character. Today the management of the company is entrusted to Lorenza Sebasti, daughter of one of the owner families who took over the management of the company in 1993. Today it establishes itself as one of the most dynamic realities of Chianti Classico, capable of blending together local grapes with international vines, for results of elegance and finesse both in the mouth and on the nose.

Production method
The sale takes place strictly by hand in boxes from the end of August until mid-October depending on the state of ripeness of the individual plots. For the production of this wine, grapes from the youngest vines aged between 10 and 12 years are used. Fermentation takes place in steel tanks at a temperature of 32-33°C for a duration of approximately 25 days, induced by indigenous yeasts. The wine then undergoes malolactic fermentation in steel tanks. The wine undergoes a period of refinement in second or third passage barrels; it was then bottled and, after a further period of rest in the bottle, it was released on the market.

Tasting note
It flows into the glass with an intense ruby red color with violet hues. On the nose, aromas of red fruit: ripening cherry, raspberry, pomegranate dominate, and then fade into more herbaceous sensations due to the small presence of merlot and sensations of black pepper and vanilla due to the passage in wood. In the mouth full, robust body, but also a discreet softness and elegance complete the sip.
Possible combinations
Icon of Chianti Classico, very elegant and versatile: I would pair it with a traditional steak even where a robust but also elegant and enveloping Chianti classic is preferred, or with a first course based on meat or with tomato sauce.
