Description
History
The San Giusto a Rentennano structure is located on the upper course of the Arbia river in the southernmost area of the Chianti Classico denomination. The company stands on an ancient monastery at the time called San Giusto alle Monache which over the centuries was transformed into a fortress. According to some documents, as early as 1204 the castle was marked as the border between the counties of Siena and Florence. Today the structure and the company have belonged to the Martini di Cigala family since 1914 and the battlements of the fortress, the castle walls and the underground cellars that serve as a place of aging for the wines produced are still intact.

Production method
The harvest is carried out manually usually in September when the grapes reach perfect ripeness. The grapes are fermented in enameled concrete and/or stainless steel tanks for about 14 days, during which frequent punching down and pumping over are carried out. When racked, the juicy pomace is pressed and the pressed juice is added to the wine. After malolactic fermentation, the wine ages in 500-liter oak tonneaux for about 10-12 months with a further 6 months before being released for sale.

Tasting notes
Dark and bright ruby red color. Notes of ripe red fruit, cherries, black cherries and blackberries on the nose, aromas of gaggiolo and violet, balsamic hints and sweet spices of black pepper and cloves. In the mouth the wine is soft, rich and medium-bodied, with bright and lively tannins and a fresh final acidity. Overall elegant and with a persistent finish.
Possible pairings
Suitable in combination with platters of Tuscan cold cuts and tasty cheeses or with first courses with structured sauces. Also excellent with red meats in general and with the traditional Florentine steak.
