Description
History
Champagne Chavost is a cooperative founded in 1946 in Chavot-Courcourt, in the Vallée de la Marne. In recent years it has embraced organic viticulture and low-intervention winemaking, focusing on spontaneous fermentations, minimal sulphur use and zero-dosage Champagnes. Paradoxe perfectly reflects this philosophy, combining traditional craftsmanship with a contemporary vision of terroir expression.
Grape variety
60% Chardonnay, 40% Pinot Meunier.
Vinification
The grapes come from organically managed vineyards. After gentle pressing, the base wines ferment spontaneously with indigenous yeasts in both oak and stainless steel. The wine spends more than 20 months ageing on its lees before disgorgement. It is bottled as a Brut Nature, with no dosage and no added sulphites, preserving its purity and authentic expression.

12.5%.
Tasting notes
Bright straw yellow with green highlights and a fine, persistent mousse. The nose reveals aromas of citrus, green apple, crisp orchard fruit, fresh bread, biscuit and subtle hazelnut with mineral nuances. The palate is dry, lively and precise, combining citrus freshness, crisp apple flavours and a pronounced mineral character that leads to a long, clean finish.
Food pairings
Excellent as an aperitif, it pairs beautifully with oysters, shellfish, seafood tartare, sushi, fish carpaccio, baked fish, delicate white meats and fresh cheeses. Its vibrant minerality also makes it an outstanding partner for modern fine cuisine.
