Description
History
Domaine Saint Préfert, founded in the 1930s by Fernand Serre, is located in the Châteauneuf-du-Pape appellation of the Rhône Valley. It was one of the first estates to bottle its own wines. Since 2003, the property has been managed by Isabel Ferrando, who has continued the tradition with a focus on quality and respect for the terroir.

- 5% Syrah
- 5% Mourvèdre
- 5% Cinsault
Production method
- Harvest: Manual harvesting from vineyards with an average age of 60 years, situated on soils composed of galets roulés, gravel, blue carbonated clay, sands, and limestone.
- Vinification: Fermentation in concrete tanks with temperature control; use of whole clusters; pump-overs performed during alcoholic fermentation.
- Aging: 15 months in concrete tanks to preserve the purity of the fruit and the expression of the terroir.

13.5% vol.
Tasting notes
- Color: Deep ruby red with violet highlights.
- Aroma: Complex aromas of ripe black fruits, such as blackberry and plum, accompanied by spicy notes of black pepper and licorice, with a hint of Provençal herbs.
- Taste: Full-bodied and velvety, with soft tannins and balanced acidity. The finish is long and persistent, featuring notes of dark chocolate and sweet spices.
Pairing suggestions
Pairs perfectly with red meat dishes such as roasts and stews, game, and aged cheeses. Also excellent with Mediterranean cuisine, such as herb-crusted lamb or wild boar stew.
