History
Oto is a Champagne producer focused on vineyard quality and authentic expression of single varietals. This wine is made from grapes grown in Grand Cru vineyards, a designation that underscores exceptional soil quality and terroir expression. The Brut Zéro style reflects a philosophy of purity and freshness without added sweetness after disgorgement.

Vinification
Traditional method (Champenoise) with secondary fermentation in bottle. Initial alcoholic fermentation in stainless steel preserves primary fruit character, followed by extended lees ageing to build complexity and fine mousse texture. The Brut Zéro dosage (0 g/l) preserves natural acidity and sapidity.

Tasting notes
Bright straw yellow with an ultra-fine, persistent perlage. Aromas of white-fleshed fruit, green apple, citrus, yeast notes and subtle bread crust, with elegant minerality. On the palate: dry, vibrant and savoury, with bright acidity, elegant structure and a long, clean finish emphasizing freshness and mineral character.
Food pairings
Pairs beautifully with oysters, shellfish, fish carpaccio, sushi and sashimi, delicate risottos, grilled or baked fish and fresh cheeses. Also perfect as a refined aperitif or alongside contemporary gourmet cuisine.
