Description
History
Éric Taillet is a fourth-generation vigneron based in Baslieux-sous-Châtillon, in the Vallée de la Marne. Since 1995, he has been leading the family estate, focusing on enhancing Pinot Meunier and the local terroir. L’Autentique 2015 represents one of his most refined cuvées, showcasing his dedication to quality and craftsmanship in Champagne production.

- 100% Chardonnay
Production method
- Harvest: Manual harvesting from vineyards over twenty years old located on clay-limestone soils.
- Vinification: Fermentation in stainless steel tanks with aging on lees for at least 36 months.
- Dosage: Extra Brut with a dosage of 1 g/l.
- Disgorgement: February 2023.

- 12% vol.
Tasting notes
- Color: Bright straw yellow with golden highlights.
- Aroma: Aromas of fresh fruit, particularly ripe citrus, with floral notes and a hint of spice.
- Taste: Fresh and juicy on the palate, with pronounced acidity and a precise mineral finish.
Possible pairings
Perfect with Mediterranean fish dishes, seafood, and shellfish. It also pairs well with fresh cheeses and vegetable-based dishes.
