Description
History
Damien Hugot defines himself as a one hundred percent winemaker. Its winery is located in Epernay and the majority of its vineyards are located in the area known as Côte des Blancs, famous for Chardonnay, one of the most emblematic varieties of the Champagne region. Damien Hugot’s Champagne production amounts to approximately 55,000 bottles.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; which in this case is partially made in steel and barrel; the second, however, takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking); in this case the refinement is continued for at least 24 months sur lies.

Tasting notes
Straw yellow in color with golden hues, it has a fine and delicate effervescence. On the nose, it reveals a particularly delicate fragrance, with a mix of fruity notes and mineral and spicy nuances. On the palate, it offers a sublime pleasure, with a very marked creaminess and a long and tasty finish.
Possible combinations
It can be accompanied by fish, shellfish, cheeses, appetizers and desserts. Furthermore, it is perfect for celebrating special occasions or for an informal toast with friends.
