Description
History
After a brilliant career in the financial world, in 1985 Alain Thiénot founded his own champagne house in Taissy, not far from the city of Reims. Today his sons Stanislas and Garance manage the maison following all the teachings received from their father. In just a few decades they have been able to establish themselves like many other historically more established and long-lived maisons, reaching truly noteworthy levels of quality in their champagnes.

Production method
It is produced according to the so-called methode champenoise or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it has in common with the rest of the wines) takes place in fermentation vats; the second, however, takes place directly in the bottle and ensures that during this second process, thanks to particular yeasts, the wine also develops carbon dioxide (which will then give life to the famous bubbles upon uncorking). The wine rests on its yeasts for 60 months before being released on the market.

Tasting notes
Brilliant straw yellow color with a fine and persistent perlage. The skilful union of several grape varieties gives the nose complex sensations; in fact we find aromas of white flowers and fresh yellow pulp fruit, butter, yeasts, bread crust and hazelnut. On the palate instead powerful, young but more complex on the finish, closed by a discreet acidity and an enveloping finish. Category.
Possible combinations
Thiénot is ideal as an accompaniment to various types of fish dishes or as a meditation wine. Highly recommended to try a very high quality product.
