History
Founded in 1899, Maison Assailly is a historic family-run estate located in Avize, one of Champagne’s most renowned Grand Cru villages. For generations, the Assailly family has passionately dedicated themselves to viticulture, cultivating approximately 11 hectares of vineyards, primarily in Avize, with small parcels in Cramant and Oger. Their philosophy centers on sustainable viticulture and traditional winemaking practices aimed at highlighting the unique characteristics of the terroir and Chardonnay grapes.

Production Method
The grapes are hand-harvested and gently pressed to preserve their quality. Primary fermentation occurs in a combination of stainless steel tanks and oak barrels, followed by élevage of both base and reserve wines in concrete tanks and wood for periods up to three years. All wines undergo malolactic fermentation to soften the typical acidity of Avize grapes. After blending, the champagne ages on the lees for a minimum of 36 months, ensuring complexity and depth in the final product.

Tasting Notes
Bright straw yellow color with fine and persistent perlage. The nose reveals aromas of white-fleshed fruits, citrus, and delicate floral notes, accompanied by hints of bread crust and toasted almond from lees aging. On the palate, it is fresh and lively, with pronounced minerality and a long, harmonious finish reminiscent of green apple and lemon.
Food Pairing
Perfect as an aperitif, it pairs excellently with fish dishes, shellfish, and seafood. Excellent with sushi, oysters, and fish carpaccio. It also complements fresh cheeses and light vegetarian dishes.
