Description
History
Founded in 1899, Maison Assailly is a historic family-run estate located in Avize, one of Champagne’s most renowned Grand Cru villages. For generations, the Assailly family has passionately dedicated themselves to viticulture, cultivating approximately 10 hectares of vineyards in the Avize terroir, following sustainable and environmentally friendly practices. Their philosophy centers on highlighting the unique characteristics of the terroir and Chardonnay grapes through traditional winemaking methods and the skillful use of Burgundian-style wood.
Grapes Used
- 100% Chardonnay
Production Method
The grapes are hand-harvested and gently pressed to preserve their quality. Primary fermentation occurs in a combination of stainless steel tanks and oak barrels, followed by élevage of both base and reserve wines in concrete tanks and wood for periods up to three years. All wines undergo malolactic fermentation to soften the typical acidity of Avize grapes. After blending different vintages, the champagne ages on the lees for a minimum of 36 months, ensuring complexity and depth in the final product.
