Description
History
Castello di Ama, founded in 1976, is located in Gaiole in Chianti, in the heart of Tuscany. The estate is managed by Lorenza Sebasti and Marco Pallanti, who has been the winemaker and technical director since 1982. The company’s philosophy is to express the uniqueness of the terroir in every bottle through sustainable viticulture practices and traditional winemaking methods. The Montebuoni vineyard, purchased and replanted in 1997, is situated on a slope parallel to the renowned Bellavista vineyard, at an altitude between 420 and 500 meters above sea level, with clay-limestone soils.

Production Method
The manual harvest began in mid-September and concluded on October 8, 2020. The varieties were vinified separately using only indigenous yeasts, with fermentation in stainless steel tanks at controlled temperatures between 28-30°C. For Sangiovese, manual pump-overs were performed, with maceration on the skins for 24 days. After racking, the wine underwent malolactic fermentation in fine-grained oak barriques. Once malolactic fermentation was complete, the wines were blended and aged in barriques for 12 months before bottling in the spring.

Tasting Notes
The wine presents a deep ruby red color with purple highlights. On the nose, it offers fruity aromas of blueberry, blackberry, raspberry, and currant. On the palate, it is refined and balanced, harmonious with a persistent and long-lasting aromatic profile. A wonderful expression of elegance.
Food Pairing
It pairs perfectly with Tuscan cuisine dishes, such as bistecca alla fiorentina, pappardelle with wild boar ragù, and aged cheeses. Also excellent with roasted red meats and game.
