Description
History
Castello della Sala is the Umbrian estate of the Marchesi Antinori, purchased in 1940 near Orvieto. Cervaro della Sala was a groundbreaking Italian white in the 1980s thanks to its use of barrel aging and malolactic fermentation. The 2023 version continues this legacy: vinified with care in steel and wood, aged in barriques, and rested in bottle before release.

Chardonnay 95 %, Grechetto 5 %
Vinification
Fermented in barriques and stainless steel at controlled temperature; part of the wine is aged in wood to build structure and complexity; aged on fine lees and then further bottle aging before release.

Tasting notes
Bright straw yellow. On the nose: white-fleshed fruit, citrus, butter, hazelnut and light mineral notes. On the palate it is elegant with good acidity, a smooth texture, balance between freshness and structure, and a persistent saline finish.
Food pairing
Pairs beautifully with shellfish, fish carpaccio, foie gras, refined risottos, baked fish and gourmet white dishes. Serve at 10‑12 °C.
