History
Located in Santa Cristina a Mezzana, the Il Sassolo company is rooted in the heart of the Carmignano wine area. With a long tradition, the winery aims to enhance the local terroir through practices that respect nature and limited production, which guarantees high quality. Carmignano DOCG is one of the flagships of their offer, capable of best expressing the essence of the territory.

Production Method
The grapes are hand-harvested and undergo controlled fermentation in stainless steel tanks. After a maceration period of about two weeks, the wine is aged for 12 months in Slavonian oak barrels, followed by further bottle refinement. This process endows the wine with balance, depth, and refined elegance.

Tasting Notes
In appearance, it shows a brilliant ruby red color. The nose reveals aromas of ripe red fruits, such as cherries and plums, complemented by spicy notes of vanilla and a hint of tobacco. On the palate, it is soft and well-structured, with velvety tannins and a long, pleasantly persistent finish.
Pairing Suggestions
This Carmignano pairs wonderfully with red meats, game, and roasts. It is also an excellent companion to aged cheeses and hearty traditional Tuscan dishes, such as pappardelle with wild boar or peposo.
