Tasting notes
Bright straw yellow. On the nose: white-fleshed fruits (peach, apricot), white flowers, citrus peel, subtle Mediterranean herbs and a clear minerality reminiscent of fossilised shells from the San Gimignano terroir. On the palate: fresh acidity, well-balanced body, slightly sapid-mineral finish inviting another sip.
Food pairings
Great as an elegant aperitif, pairs excellently with seafood starters, shellfish, sushi/sashimi, vegetable risottos or grilled scampi. Also complements sophisticated vegetarian dishes and fresh cheeses.
