History
Domaine Olivier Boussard is a family-owned estate located in Nitry, between Chablis and the Auxerrois region. The family has farmed the area for generations and today Olivier Boussard focuses on sustainable viticulture and terroir expression. The estate holds HVE certification and the Vieilles Vignes cuvée comes from its oldest Pinot Noir vineyards.

Vinification
The grapes are harvested from old vines and traditionally vinified as a red wine. Oak ageing contributes texture and structure while preserving the fruit-driven character and elegance of Burgundy Pinot Noir.

Tasting notes
Bright ruby red with violet highlights. The bouquet reveals cherry, raspberry, red currant and wild berry aromas, complemented by delicate spice and subtle vanilla notes. On the palate it is fresh, silky and balanced, with refined tannins and a long elegant finish.
Food pairings
Excellent with roast duck, poultry, veal fillet, mushroom dishes, delicate charcuterie and medium-aged cheeses. It also pairs beautifully with classic French cuisine and truffle-based preparations.
