History

The Domaine is located in Morey, and extends over approximately 8 hectares of land all planted with highly prestigious Pinot noir; however, most of the vineyards are located in Chambolle-Musigny. The red wines produced from these vines are intense, refined and high quality, with a steady increase in value over time. The management of the Domaine passed from Robert to his son Serge and then to his grandson Nicolas, who has introduced some improvements in recent years.

Some of the cornerstones of Dominine winemaking are, for example, the very low yield of the grapes, respect for the terroir and the harvesting of grapes only in a perfect state of ripeness. The most challenging objective is to find harmony between the powerful structure of the wines and the great finesse of the tannic texture, without however obtaining exuberant results.

Production method

In Burgundy, the Pinot Noir winemaking process follows strict regulations to enhance the characteristics of the grape. The grape harvest is manual, with selection in the vineyard, followed by pressing and fermentation in oak vats for approximately 10-15 days. The wine is then transferred to French oak barriques for refinement and malolactic fermentation, which lasts on average from 12 to 18 months. During this period, the wine is tasted to monitor its development. After aging in the bottle, the wine is ready for marketing.

Tasting notes

Dark ruby ​​color with violet reflections. On the nose it exudes hints of ripe red fruit such as cherries and raspberries, accompanied by spicy, mineral and wet earth notes. On the sip, the tannin is firm but velvety, creating a silky texture that envelops the palate. Its structure is round and well balanced, with a long persistence of fruity and spicy flavours.

Possible combinations

This wine is perfect for accompanying red meats, mature cheeses and mushroom-based dishes. It is a wine that matures well with time and offers an extraordinary tasting experience to those who love powerful and decisive wines, but at the same time extraordinarily elegant.
