History
Introduced in 2008, this Champagne reflects Bollinger’s long-standing expertise in still Pinot Noir, sourced from prestigious plots like Côte aux Enfants (Aÿ) and Verzenay. The red wine component enriches the house Cuveé with character and structure.
Grape varieties
62% Pinot Noir, 24% Chardonnay, 14% Pinot Meunier, with 5–6% still Pinot Noir red wine.
Vinification
Blend from over 85% Premier and Grand Crus. Traditional fermentation, at least 30 months on lees, and inclusion of barrel-fermented still red wine to add depth and richness.
Alcohol content
12%.
Tasting notes
Salmon-pink with golden highlights and a fine, persistent mousse. Aromas of wild red berries—currant, strawberry, cherry—with notes of toasted brioche, almond, and delicate spices. On the palate, it is creamy and balanced, combining vibrant fruit, chalky minerality, and a soft tannic structure; the finish is long with pink citrus and almond echoes .

Delicious as an aperitif, it pairs beautifully with shellfish, sashimi, roast poultry, delicate game, and lightly spiced Japanese cuisine. Also shines with fruit-based desserts like raspberry tart or strawberry shortcake
