Description
History
Sottimano winery is located in the heart of the Langhe region, one of Italy’s most prestigious wine areas. With a philosophy centered on respecting nature and tradition, Sottimano produces wines that reflect the authenticity of the land. The Fausoni vineyard, covering about 1.5 hectares, is renowned for producing elegant and structured wines, thanks to its calcareous soils and favorable microclimate.
Grapes used
- 100% Nebbiolo.
Production method
- Harvest: Handpicked with meticulous grape selection.
- Vinification: Spontaneous fermentation without selected yeasts, featuring long macerations on the skins and a submerged cap period.
- Aging: 18-22 months in French oak barriques, with a small percentage new, followed by approximately one year of bottle aging.
Alcohol content
14.5% vol.
Tasting notes
- Color: Deep garnet red.
- Aroma: Delicate scents of wild berries, with balsamic and mentholated notes.
- Taste: Dense tannins with a youthful and flavorful finish.
Pairing suggestions
Pairs excellently with red meat dishes, game, and aged cheeses. Also complements traditional Piedmontese dishes like brasato al Barolo or risotto with porcini mushrooms.
