Description
History
Le Macchiole, a historic Bolgheri estate, pioneered single-variety wines in the region and elevated Cabernet Franc with Paleo. The vineyards lie on sandy and clay-rich soils with a stony component, allowing the grape to express finesse and depth. Paleo is crafted through meticulous vineyard work, low yields, manual harvesting and rigorous grape selection, aiming for purity and territorial identity.

Vinification
Fermentation in stainless steel with extended maceration. Aged about 18 months in French oak barriques, partly new. Each parcel is vinified separately and blended after careful evaluation. A minimal-intervention approach protects varietal purity and freshness.

Tasting notes
Deep ruby red. Aromas of blackcurrant, ripe raspberry, blackberry, black pepper, Mediterranean herbs, tomato leaf and graphite. The palate is rich yet vibrant, with silky, dense tannins, well-integrated acidity and impressive length. The finish is elegant, spicy and distinctly Mediterranean.
Food pairings
Grilled red meats, pepper-crusted fillet, roasted lamb, light game, porcini mushrooms, beef tartare, aged cheeses. Also excellent as a meditation wine.
