Description
History
The “Les Chailles” cuvée was introduced with the 2003 vintage as a blend of various parcels located at the foot of the granite slopes of Cornas. The name “Chailles” refers to the siliceous concretions present in the soil, originating from the Triassic period, which impart a particular minerality to the wine.

Production method
- Harvest: Manual harvesting from vineyards approximately 40 years old, cultivated using organic and biodynamic practices.
- Vinification: Fermentation with indigenous yeasts and maceration for several weeks in stainless steel tanks, with punch-downs and pump-overs twice daily.
- Aging: Maturation in 228-liter oak barrels for 18 months, without the use of new wood.
- Sulfur: Reduced use of sulfites, with a total of 52 mg/l of SO₂ (the allowed limit in organic winemaking is 100 mg/l).
Alcohol content
- 12.5% vol.
Tasting notes
- Color: Deep ruby red.
- Aroma: Aromas of ripe black fruits such as blackberries and red plums, accompanied by notes of ground pepper and floral incense.
- Taste: Medium-bodied with bright acidity, supple and layered structure, ripe tannins, and a balanced finish.

Pairs perfectly with game dishes, grilled red meats, stews, and aged cheeses.
