Description
History
Cascina Fonda is based in Neive, in the province of Cuneo, in the heart of the Asti Spumante area. The company was founded in 1963 by Secondino Barbero, although it will be the two sons Marco and Massimo who, starting from 1988, will implement the production and quality of the latter, increasing sales and exporting to many countries abroad.

White Muscat of Canelli 100%
Production method
The grapes are harvested late to increase the sugar concentration and the aromas, and immediately transported to the cellar rooms where they are immediately pressed and destemmed. Vinification is then traditional in white at a controlled temperature of about 16°C. The subsequent fermentation, responsible for the second fermentation, takes place according to the Charmat Martinotti method in an autoclave with the addition of selected yeasts. The product is subsequently cold stabilized, bottled and after a few months of rest, it is actually placed on the market.

Tasting notes
Brilliant straw yellow color with persistent and delicate perlage. On the nose aromatic notes of Muscat grapes, white flowers, rose petals and white peach. On the palate delicate in turn, sweet with a pleasant final freshness.
Possible combinations
Cascina Fonda Tardivo is an excellent sparkling wine at the end of the dinner/Christmas party toast, even if it is very suitable in general for the end of the meal and in combination with desserts such as pandoro, panettone, grandmother’s cakes or mimosa cake, white fruit tarts.
