Description
History
Founded around the 70s thanks to the vision of four families of Roman origin, with the aim of revitalizing the area and the vineyards and giving the Chianti Classico the fame it once had. The vineyards extend over an area of about 75 hectares at an altitude ranging from 475-520 m which are the cradle for wines of character. Today the leadership of the company is entrusted to Lorenza Sebasti, daughter of one of the owner family who has taken over the management of the company since 1993. Today it is affirmed among the most dynamic realities of the Chianti Classico, capable of blending together local grapes with international vines, for results of elegance and finesse both in the mouth and on the nose.

Production method
The harvest takes place strictly by hand in boxes from the end of August to mid-October depending on the state of ripeness of the individual parcels. Fermentation takes place in steel tanks at a temperature of 32-33°C for about 26 days with frequent pumping over, induced by indigenous yeasts. The wine then carries out the malolactic fermentation in barriques, and after this procedure the two varieties are assembled and then aged in fine-grained oak barriques for 40% new for about 15 months.

Tasting notes
Intense ruby red color with violet hues. On the nose rather pronounced spice notes (typical of the vineyard) of black pepper, cloves, vanilla, tobacco, mint perfectly integrated with the notes of ripe fruit. On the palate it attacks immediately robust and powerful, ample; the characteristic of this wine and of the corporate style is “playing” to find the perfect balance between tension in the mouth and great finesse and elegance, and cleanliness in the succession of aromas. Superlative.
Possible combinations
Super expression of a great territory and a great wine thanks to the splendid work of Marco Pallanti. Excellent as a meditation wine or in combination with traditional Tuscan dishes, fine red meat dishes or game, even cooked for a long time. Also perfect with seasoned and/or savory cheese platters.
